It is getting that time again where people start grilling and the good smells invade our homes.
I figured it would be a good time to post of some of the recipes we all use.
Easy Pork Green Chili:
cook time: 4-8 hours
Servings: 8ish
Ingredients:
- 2 or 3 thick Pork chops
- 1 Onion Large White well chopped
- 1 TBS cumin
- 1 TBS chili Powder
- Salt/Pepper to taste
- large container chicken broth
- 1 large clove garlic chopped
- 1 medium can chopped tomatoes
- Little bit of flour as needed to thicken
- 1 Quart Freezer bag of fresh Green Chilis 12/14 approx cut and seeded( leave seeds for more heat)
- 1 Lime
- 2 TBS sugar
- 1 can corn if wanted
To Start,
1. Get a large crock pot and pour the Chicken Broth, tomatoes, corn, and Green Chilis into it with the pork chops and allow to cook as you prep.
2. in large case iron pan heat some Olive oil and add Cummin, brown for a few minutes then add chopped onions, and Garlic and Chili Powder. Simmer until onions and garlic are browned / caramelized.
3. Once the onion/garlic mix is browned add to crockpot and let cook for at least 4 hours, stir once in awhile.
4. Once pork chops are cooked fully remove from Crock Pot and dice/pull the meat. once cut up add to crock pot again and use an electric mixer to pull/mix everything in the crock pot ( this will give it a great texture)
5. next add flour 1TSP at a time to thicken up the chili until it is somewhat still a soup, but holds together.
6. add sugar and mix
7. Salt and pepper to taste
8. Cut up lime and serve with lime.
