It is getting that time again where people start grilling and the good smells invade our homes. 

 

I figured it would be a good time to post of some of the recipes we all use. 

 

Easy Pork Green Chili:

cook time: 4-8 hours

Servings: 8ish

 

Ingredients:

- 2 or 3 thick Pork chops

- 1 Onion Large White well chopped

- 1 TBS cumin

- 1 TBS chili Powder

- Salt/Pepper to taste

- large container chicken broth

- 1 large clove garlic chopped

- 1 medium can chopped tomatoes

- Little bit of flour as needed to thicken

- 1 Quart Freezer  bag of fresh Green Chilis 12/14 approx cut and seeded( leave seeds for more heat)

- 1 Lime

- 2 TBS sugar

- 1 can corn if wanted

 

To Start,

 

1. Get a large crock pot and pour the Chicken Broth, tomatoes, corn, and Green Chilis into it with the pork chops and allow to cook as you prep.

2. in large case iron pan heat some Olive oil and add Cummin, brown for a few minutes then add chopped onions, and Garlic and Chili Powder. Simmer until onions and garlic are browned / caramelized.

3. Once the onion/garlic mix is browned add to crockpot and let cook for at least 4 hours, stir once in awhile.

4.  Once pork chops are cooked fully remove from Crock Pot and dice/pull the meat.  once cut up add to crock pot again and use an electric mixer to pull/mix everything in the crock pot ( this will give it a great texture)

5. next add flour 1TSP at a time to thicken up the chili until it is somewhat still a soup, but holds together.

6. add sugar and mix

7. Salt and pepper to taste

8. Cut up lime and serve with lime.

Hot Cocoa!

 

1 Gallon Whole Milk

Shy 1/2 Cup Cocoa Powder,

3/4 Cup Sugar

~1 Tbsp Sea-90 (Sea Salt)

~1/2 Tbsp Vanilla Extract

~1 tsp Maple Extract 

 

To Start,

 

  1. Milk Cow (you may substitute store bought "Milk")
  2. Pour Milk into large pot
  3. Heat to desired Temperature
  4. Add Salt & Sugar and Stir
  5. Add Cocoa Powder and Stir
  6. Add Vanilla & Maple Extract
  7. Stir everything together one last time.
  8. And then the easiest step, enjoy!

KFC seasonings...

 

A little something I found on the internet and I've modified my version a bit from this design.

Directions

Combine all ingredients as listed in a small jar with a tight fitting lid (baby food jars work good). Shake mixture to combine. Stores for months. Keep out of direct sunlight, heat and humidity.

 

I personally season my chicken directly with this mixture. Taste really good!

Chamorro Tacos

 

cook time: 2 hours

Servings: 4ish

 

Ingredients:

- 2 large Chicken breasts

- 4 large lemons

- 1 large onion

- 1 medium garlic

- 1 bag of unsweetened ( or washed, to remove sugar, sweetened) grated coconut

- 3-4 cups water

- 1 TBS Cumin ( optional)

- Corn Tortillas

 

 

1.  In a large pot bring water to boil, add chicken to boiling water until cooked.

2. In large sauce pan brown onions and garlic, add cumin if desired

3. In a large mixing bowl combine onion/garlic mix and coconut.

4. Completely squeeze all 4 lemons, including pulp into the mixing bowl. The mix should be VERY heavy on the lemon, add another lemon if any mix isn't covered/soaking in the lemon juice,

5. Once the chicken is fully cooked remove it from the water and let cool, once cool use forks to pull the chicken apart fully into taco like meat.

6. Add chicken to the rest of the mix and let sit for an hour.

7. crisp corn tortillas in the pan, then add filling mix to the tacos and warm until hot. 

 

Serve and enjoy.

Reatta Grill Blend Spice Mix

 

 

Ingredients
  • 4 tablespoons kosher salt
  • 3 tablespoons ancho chili powder
  • 2 tablespoons dried granulated garlic
  • 2 tablespoons sugar
  • 2 tablespoons ground cumin
  • 2 tablespoons coarsely ground black pepper
  • 1 tablespoon ground thyme

This is an awesome spice mixture.  

Directions

Combine all ingredients, blending well. Store in an airtight container. Shake or stir before use.

I use it on all meat........................... wild game, chicken, beef etc.

 

I've not used it for fish though...................................although I think it would be great.

 

Doesn't matter whether it's on the grill or stove top either............................it's a great blend.

I made some smoked salmon smoked nachos last night!

Smoke a wild Alaskan Salmon fillet for 3-4 hours.

Line a 13x9 pan with foil

Place a layer of chips in pan

Put a layer of crumbled smoked salmon, black beans, diced onion and shredded cheddar/Jack.. Sprinkle with lime juice

Repeat chips and toppings layer

Top with shredded queso blanco

Smoke/bake in smoker at 275-325°

Additional toppings could be green chillies, retired beans, tomato (top after cheese melts, only long enough to get warm)

Serve with fresh homemade guac and beer
